Meadmaking is the process of turning honey into wine. It is probably the oldest fermented beverage known to man. The simplest way to make mead is the best way in my opinion and turns in high quality mead.  Simply add a little of water to your honey and mix with a sanitized mixer on low for about one minute. Keep repeating this process until all of your water has been added to make your target amount. Then take a hydrometer reading. We target a gravity of 1.1 or above but you can go anywhere above 1.08 for mead. Then add your yeast nutrients and yeast and place cover and airlock on.   Every 12 hours for the next 36 hours a yeast nutrient addition should be added. After 36 hours, you should let the fermentation go for about 2 weeks. At this point all fermentation should be done and you should get a hydrometer reading of 0.99 or below.  Then you will rack into a secondary container and let sit for 6 months. This should allow your mead to clarify and it will be ready for bottling.
